This coffee comes from coffee farmer Silvestre Velasquez, whose 1.5-hectare farm, "Rancho Las Vegas," is situated at a high altitude in the Huehuetenango province. While most of our Huehuetenango coffee comes from the north, Silvestre's farm is located in the southernmost city of Tectitan. At an altitude of 2,000 meters, Rancho Las Vegas grows three types of coffee beans: Bourbon, Catimor, and Caturra, which he harvests and processes together. His washed process involves fermenting the pulp-removed beans for 48 hours, during which the sticky pectin is broken down, making it easier to wash off the beans. Afterward, the beans are moved to a concrete terrace to dry. We found that Silvestre's coffee, when brewed, has a fruity aroma and brings a lively acidity to a light roast.

這款咖啡來自一位名叫西爾維斯特 貝拉斯克斯(Silvestre Velasquez)的咖啡農,他的1.5公頃農場「拉斯維加斯牧場」(Rancho Las Vegas)坐落在韋韋特南戈省的高海拔地區。雖然我們的韋韋特南戈咖啡大多產自北部,但西爾維斯特的農場位於最南端的特克蒂坦市。拉斯維加斯牧場海拔2000米,種植波本(Bourbon)、卡蒂莫(Catimor)和卡圖拉(Caturra)三種咖啡豆,他將這三種咖啡豆一起採摘和加工。他的水洗處理方法是將去除果肉的咖啡豆發酵48小時,在此期間,黏稠的果膠會被分解,更容易從咖啡豆上清洗掉。之後,咖啡豆會移到水泥露台上曬乾。我們發現西爾維斯特的咖啡沖泡後帶有果香,為淺烘焙咖啡帶來活潑的酸度。
