Villalobos is a naturally dwarfed variety of Typica, primarily grown in Costa Rica, and typically possesses a distinctive flavor and pronounced acidity. The El Coyote farm, operated by brothers Horacio and Alejandro Solis, is located in the highlands of the Talamanca Sierra in Tarrazu. There, they operate the Don Oscar microprocessor, named in honor of their late father, Oscar Solis, who initially planted coffee on this land. Their farm is divided into 40 distinct plots, each clearly defined and planted with different coffee varieties. El Coyote coffee is grown in the Villalobos and Catuaí regions at altitudes exceeding 2000 meters. This is a honey-processed coffee, meaning that after the outer pulp is removed, the pectin layer remains on the coffee bean and stays intact during the drying process. After drying, the coffee turns red, hence the name "honey-processed." We often find that honey-processed coffee has a richer fruity aroma than washed coffee; while I wouldn't call this coffee "fruity," it certainly has a clean fruity flavor. Honey-processed coffee tends to be darker in color after roasting and produces more of the coffee shell.
