"Guardian del Bosque" is the name of Ronald Carranza Montenegro's farm. His 11.5-hectare farm, located at an altitude of 1600 meters, grows various coffee varieties, including Geisha. Ronald is a long-time member of the local coffee cooperative, the Juan Marco El Palto Coffee Producers Association (JUMARP). This cooperative is dedicated to providing technical assistance to farms, such as best practices for post-harvest processing, and improvements to processing environments and drying spaces. The cooperative also helps the farm obtain organic and fair trade certifications, ensuring their coffee commands higher prices. Ronald experiments with different processing methods; this year we purchased Geisha coffee processed using three methods: washed, honey, and natural. Each method imparts a unique flavour to the coffee, with the honey coffee exhibiting a clean and refreshing taste, with subtle floral, fruity, and herbal aromas.
